Have you ever wanted to go on a long road trip, but wanted super easy meal ideas to keep the clutter light? We did! On May 13th, 2020, we left Anchorage, AK to start our eight day trip through the Yukon to Colorado Springs, CO. This trip was magical and beautiful. We had the opportunity to go through with our moving process. A lot of military members weren’t so lucky, and their moving and/or deployment homecomings were pushed back. That’s why we didn’t want to take this trip for granted. It was a huge blessing that we were able to do this trip in the first place. When we were in the middle of Canada, I jotted down some words in my journal to remember what happened and all the crazy things we were seeing on the road.
This is an excerpt from my journal:
This trip was one of the coolest things we have done in our lifetimes. Because of the un-predictableness of this trip, we needed something simple and delicious. I was like, Energy Balls! They will be perfect for our mornings on the road, and they are delicious with coffee too. The day before our departure date, I made our decadent Energy Balls.
The ingredients are super easy to get, and most are pantry staples. You will need:
- 1 C. Oats
- 1/4 C. Coconut Flour
- 1/2 C. Flax Seed (Ground)
- 1 Tbsp. Chia Seeds
- 1/2 C. Semi-Sweet Chocolate Morsels
- 1/2 C. Creamy peanut butter
- 1 tsp. Vanilla extract
- 1/3 C. Honey
Once you have measured out all your ingredients, place them in a bowl and stir together. Don’t be shy and get your hands in there to mix everything up. Now we are going to grab a small baking sheet and cover it with foil. Using foil is such a lifesaver, and a time saver. Who wants to scrub their pans? I don’t! After covering the pan with foil, scoop a tablespoon size of the mixture and start rolling it into a ball with the palms of your hands. Remember, the ball doesn’t have to be perfect. Then place the ball on the foil covered pan. Proceed with the rest of the mixture.
Now comes the hard part! Get another sheet of foil and cover the balls where they are nice and snug. Take your balls, and place them in the freezer. We want the mixture to set, so we need to leave them in overnight. Now you have some delicious decadent balls to eat whenever. They are even better with coffee!
The best way to store these magnificent balls is to place them in a container with a lid, and keep them in the refrigerator. They will stay fresh for up to 2 weeks. I promise they won’t last that long!
